Goose eggs are considerably larger than hens eggs but can be used in the same way as any other eggs. A helpful rule of thumb is to substitute one goose egg for two large hens eggs. However, sizes can vary so some judgments is also needed. They tend to have much larger yokes in relation to their whites compared to hens eggs, they are also more flavourful. Goose eggs are available from mid February until to June.

Duck eggs are larger than hen's eggs and the larger yoke leads to a creamier taste. They can be used in exactly the same way as hens eggs but they do tend to make a superior rich custard . Give them a try if you haven't already!

Attractive delicate little eggs with their pretty speckled shells have a similar but slightly richer taste than hens eggs. They are the perfect size for making canapés or mini scotch eggs but are lovely just simply boiled.
